Miyabi knives are manufactured in Japan and represent some of the
highest quality and most technologically advanced cutlery available
today. The Miyabi factory is located in Seki, Japan, and is owned by the
world renowned cutlery manufacturer Zwilling J.A. Henckels. These
Japanese knives are quickly becoming a favorite among professional
chefs, including famous Iron Chef Morimoto, whom endorses two Miyabi
cutlery series.
Miyabi Kaizen knives feature a
65-layer construction made up of a core of VG10 (CMV60) high performance
steel that is protected by 64-layers of Damascus steel. The blade
undergoes ice-hardening, resulting in a 60 Rockwell Hardness ensuring
outstanding durability, high corrosion resistance and flexibility. The
Katana edge is finished in the traditional 3-step Honbazuke method and
hand-honed by an artisan. The extremely fine blade edge is set at the
traditional Japanese blade angle of 9.5 to 12. Kaizen is even further
complimented by its ergonomic D-shape Micarta handle with mosaic pin and
red spacer accents. Whether you are making a delicate plate of sushi or

designed and approved by Iron Chef Morimoto. These knives combine
sharpness, cutting edge retention, the highest flexibility and corrosion
resistance. Features Friodur Ice-hardened construction for enhanced
hardness, flexibility and corrosion resistance, finished with a 3-step
traditional Japanese Honbazuka sharpening process. The Miyabi Morimoto
600 S Series merges authentic Japanese blades with Western style handle
to create a truly unique line of cutlery.
