Product Description
A boning knife is used to remove bones from cuts of meat. It has a thin blade 6 inches long, that allows it to get in to small spaces. A fillet knife is like a very flexible boning knife that is used to fillet and prepare fish. This knife allows you to move easily along the backbone and under the skin. This knife is the perfect combination of a boning and fillet knife for the chef's who only has the space for one.
Shun Classic knives are beautifully finished and constructed from only the finest materials: Stainless steel bolsters and buttcaps, Pakkawood resin handles, and VG-10 high-carbon stainless steel. The edge is hardened more than most knives, allowing for an extra sharp edge. The unique qualities of the steel keep the edge sharp without brittleness. The blade is clad with 16 layers of softer steel for durability, then etched to show the unique "damascus" finish.
